My Backstory (And Why Speed + Quality Matter to Me)

I’m based in Florence, but my roots trace back to a small coastal town near Bari in southern Italy, where food was never “just food.” It was the rhythm of the day-market mornings, family dinners, and simple ingredients treated with respect.

My earliest food memory isn’t a restaurant. It’s Nonna Rosa: flour on her hands, dough on the table, and that calm confidence that made everything feel possible. She taught me something I still believe:

In my twenties, I moved to the U.S. and worked in fast-paced kitchens where timing is everything. That’s where I learned how to build flavor quickly without cutting corners—how to prep smart, keep textures right, and serve food that feels “worth it,” even on the busiest day.
