Description

A delightful dish featuring sweet and smoky honey BBQ flavors with tender chicken and fluffy rice, perfect for a quick weeknight dinner or a comforting weekend meal.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove the chicken and set it aside.
  3. In a bowl, mix together the BBQ sauce, honey, soy sauce, and minced garlic.
  4. In the same skillet, add uncooked rice and toast it for 1–2 minutes, stirring frequently.
  5. Pour in the chicken broth and half of the sauce mixture. Stir to combine well.
  6. Return the seared chicken to the skillet and pour the remaining sauce over the top.
  7. Cover the skillet and simmer on low heat for 15 minutes.
  8. Add the mixed vegetables (if using), cover again, and cook for an additional 5 minutes or until the rice is tender and chicken is cooked through.
  9. Allow the dish to sit for 5 minutes after cooking. Garnish with chopped green onions and serve hot.

Notes

For an extra kick, add some chili flakes to the seasoning. You can substitute brown rice for white rice, adjusting the cooking time and liquid amount. Customize mixed vegetables based on your preferences.
